Slice O' Lemon Pie - cooking recipe
Ingredients

1 1/4 c. sugar
2 Tbsp. flour
1/8 tsp. salt
1/4 c. soft butter or oleo
3 eggs, well beaten
1 lemon, peeled and thinly sliced
1 tsp. lemon rind
1/2 c. water
Preparation

Combine sugar, flour and salt. Blend in butter or oleo.
Add beaten eggs, reserving 1 teaspoon egg white. Blend until smooth. Add sliced lemon, rind and sugar mixture.
Stir in water. Blend well. Turn into a pastry-lined pan.
Top with second crust which has been slit to allow escape of steam. Seal and flute edges. Brush with reserved egg white and sprinkle with sugar and cinnamon mixture. Bake at 400\u00b0 for 30 to 35 minutes. Yields 6 servings.
