Pumpkin Bread - cooking recipe

Ingredients
    4 eggs, beaten
    3 c. sugar
    1 c. oil
    1 (16 oz.) can pumpkin
    3 1/2 c. flour
    2 tsp. soda
    1 tsp. pumpkin pie spice
    1 tsp. cinnamon
    2 tsp. salt
    1 c. mincemeat
    2/3 c. water
    1 c. chopped pecans
Preparation
    Beat eggs, sugar and oil in bowl until light.
    Add pumpkin. Add sifted dry ingredients; mix well.
    Add mincemeat, water and pecans.
    Beat until well mixed.
    Spoon into 4 well-oiled 1-pound coffee cans.
    Bake at 350\u00b0 for 1 hour.
    Cool bread in cans. Yields 48 slices.
