Berry Nice Corn Muffins - cooking recipe

Ingredients
    1 c. cornmeal
    1 c. unbleached white flour
    1/2 tsp. salt
    1/2 c. brown sugar
    1 tsp. baking powder
    1/2 tsp. baking soda
    1 large egg
    4 Tbsp. melted butter or margarine
    1/2 c. buttermilk or yogurt
    1/2 c. orange juice
    grated orange rind (whole orange)
    1 1/2 c. raspberries, cranberries, etc.
Preparation
    Preheat oven to 400\u00b0.
    Grease muffin cups.
    Combine dry ingredients well.
    Combine wet ingredients, except rind and berries.
    Make a well in center of dry ingredients; pour in the wet ingredients.
    When partially blended, add berries and rind. Mix sparingly; don't overmix.
    Fill 12 muffin cups.
    Bake for 20 minutes.
    Cool in pan for 10 minutes before removing.
