Eggplant Saute - cooking recipe

Ingredients
    1 large onion
    1 green pepper
    1 large eggplant
    1 small can stewed tomatoes
    1 clove garlic, crushed
Preparation
    Dice and saute onion and green pepper in a little olive oil and the garlic.
    Dice eggplant and add.
    Simmer for about 1/2 hour or until very tender.
    Add stewed tomatoes and salt and pepper to taste.
