Diabetic Fruit Cake - cooking recipe
Ingredients

1/2 c. raisins
5 dates, chopped fine
5 figs, chopped fine
5 dried peaches, chopped
5 dried apricots, chopped
1/2 c. crushed pineapple
1 c. pecans
1/2 c. margarine
2 eggs
1 1/4 c. plain flour
1/2 tsp. soda
1 tsp. baking powder
1/4 tsp. cinnamon
1/8 tsp. cloves
1 tsp. vanilla
Preparation

Combine all fruit in a small bowl; set aside.
Cream the margarine and vanilla.
Stir in flour, soda, baking powder and spices.
Pour in fruit mixture; beat until blended.
Bake at 325\u00b0 for 45 to 55 minutes.
Cool; store in an airtight container for 3 days.
