Potato Soup(Potetsuppe) - cooking recipe
Ingredients

4 medium sized potatoes
1/2 tsp. salt
2 Tbsp. butter
1/2 Tbsp. chopped parsley
1 small onion
2 c. milk
1/8 tsp. pepper
Preparation

Peel and quarter potatoes.
Peel and chop onion fine.
Put potatoes, onion and salt in a 2-quart saucepan.
Add water to cover.
Boil 15 to 20 minutes or until a fork pierces potatoes easily.
Mash potatoes and onion in pan without draining liquid. Slowly add milk, stirring well as you do so.
Allow soup to simmer while you add butter, pepper and parsley.
Stir over medium heat until smooth and hot.
Makes 4 servings.
