Fruity Rice Salad - cooking recipe

Ingredients
    3 to 4 c. steamed rice, cooled
    1 can pineapple chunks or tidbits, drained
    1 large navel orange or 11 oz. can Mandarin oranges, drained
    1/2 c. green, yellow and/or sweet red pepper, diced
    1/4 c. sliced or slivered almonds
    4 Tbsp. salad oil
    2 Tbsp. seasoned rice vinegar
    1/8 tsp. ground cinnamon
    2 tsp. each lime juice and honey
    honey-mustard dressing
Preparation
    If using navel orange, peel and section it, then cut sections into bite-sized pieces.
    Combine rice, fruit, peppers and almonds. In small bowl, whisk together salad oil, seasoned rice vinegar, cinnamon, lime juice and honey; pour over rice mixture and gently stir.
    Chill.
    Serve with honey-mustard dressing.
