Zucchini Relish - cooking recipe

Ingredients
    10 c. ground zucchini
    4 c. ground onions
    5 Tbsp. pure salt
    2 1/2 c. white vinegar
    4 c. sugar
    1 Tbsp. nutmeg
    1 Tbsp. dry mustard
    1 Tbsp. cornstarch
    1/2 tsp. pepper
    2 tsp. celery seed
    1 ground green pepper
    1 ground red sweet pepper
Preparation
    Combine the zucchini, onions and salt and allow to stand overnight.
    Drain and rinse in cold water.
    Drain again.
    Use a large kettle and add the vegetable mixture.
    Add the remaining ingredients.
    Simmer 30 minutes.
    Ladle into jars.
    Water bath 5 minutes.
