Catfish Gumbo - cooking recipe

Ingredients
    1/4 c. oil
    1 c. chopped bell pepper
    2 cloves garlic, chopped
    16 oz. canned tomatoes
    1/4 tsp. thyme
    1/2 tsp. red pepper
    1 lb. cubed catfish fillets
    1 c. chopped celery
    1 c. chopped onion
    4 c. beef broth
    10 oz. sliced okra
    1 bay leaf
    1/2 tsp. oregano
Preparation
    Heat oil in large stock pot.
    Saute celery, pepper, onion and garlic.
    Add broth, tomatoes, okra, thyme, bay leaf and red pepper.
    Salt to taste. Cover and simmer 30 minutes.
    Add catfish and simmer 15 minutes or until fish flakes easily.
    Remove bay leaf.
    Serve over rice.
