Eggplant Patties - cooking recipe

Ingredients
    1 medium eggplant
    1 1/4 c. shredded cheese (sharp)
    2 Tbsp. parsley
    1/8 tsp. pepper
    2 Tbsp. cooking oil
    2 slightly beaten eggs
    1 1/4 c. Ritz cracker crumbs (20)
    1 clove garlic
    1/2 tsp. salt
    2 Tbsp. minced onions
Preparation
    In covered saucepan, cook eggplant in boiling water until tender, about 5 minutes.
    Drain well and mash.
    Stir in crumbs, cheese, onion, parsley, garlic, salt and pepper.
    Shape into patties.
    Cook in hot oil for 5 minutes on each side.
