Ingredients

1/2 bushel fresh beets
1 1/2 c. white vinegar
1 1/2 c. sugar
1 tsp. salt
1/2 c. water
Preparation

Wash beets.
Leave about 4 inches of stem.
Cook until tender. Drain.
Peel.
Peelings come off when run under cold water. (Wear plastic gloves to avoid staining hands.)
Cut into slices or wedges.
