Creole Style Lentils - cooking recipe

Ingredients
    1/2 c. chopped carrots
    1/2 c. chopped celery
    1 large onion, chopped
    2 Tbsp. margarine
    1 (16 oz.) can tomatoes
    1/2 tsp. salt
    1/2 tsp. sugar
    1/4 tsp. pepper
    few drops hot pepper sauce
    1 c. lentils, cooked and drained
    hot cooked rice (optional)
Preparation
    Cook carrots, celery and onion in hot margarine in medium size saucepan until lightly browned, about 10 minutes.
    Add tomatoes, salt, sugar, pepper, pepper sauce and lentils.
    Cover; simmer for 30 minutes, stirring occasionally.
    Serve over rice.
    Makes about 5 1/2 cups.
