Baked Stuffed Fillets - cooking recipe

Ingredients
    1/4 c. butter
    2 Tbsp. chopped onion
    1/3 c. chopped celery
    1 Tbsp. chopped parsley
    1/4 tsp. dried sage
    1 c. soft bread crumbs
    1/2 c. coarsely shredded Cheddar cheese
    salt and pepper
    1 1/2 lb. fillet of sole
    3 Tbsp. butter
    3 Tbsp. flour
    3/4 tsp. salt
    1/4 tsp. pepper
    3/4 c. milk
    3/4 c. light cream
Preparation
    Heat oven to 375\u00b0.
    Melt butter. Add onion and celery.
    Cook until tender. Remove from heat and stir in parsley, sage, bread and cheese.
    Sprinkle fillets with salt and pepper. Spoon some stuffing over each fillet. Roll up and secure with toothpick. Place in buttered, shallow baking dish. Bake 30 minutes.
    While baking, prepare sauce.
