Sicilian Skillet Chicken - cooking recipe
Ingredients

4 half boneless chicken breasts, skinned
2 Tbsp. Parmesan cheese (fresh is better)
3 Tbsp. flour
2 Tbsp. oil
1 c. sliced mushrooms
1/2 onion, finely chopped
1 (14 1/2 oz.) can Del Monte Italian style stewed tomatoes
Preparation

Flatten chicken slightly.
Coat with 2 tablespoons cheese and then flour.
In a skillet, cook chicken in oil over medium heat until done.
Remove to serving dish; keep warm.
In same skillet, cook mushrooms and onions until soft.
Add tomatoes; cook uncovered over medium heat until thickened.
Spoon over pasta or rice.
Serves 4.
Cook 25 minutes.
