Swiss Steak And Rice - cooking recipe

Ingredients
    2 to 3 lb. small steaks (can use elk and deer steaks)
    4 Tbsp. flour
    4 c. Minute rice
    1/2 tsp. salt
    1/4 tsp. pepper
    2 Tbsp. shortening
    1 large can V-8 or homemade tomato juice
    1 medium onion, chopped
    1 small green pepper, chopped
Preparation
    Mix flour, salt and pepper.
    Dip steaks in flour.
    Heat shortening and brown steaks about 15 minutes.
    Pour V-8 juice over the top.
    Add onion, then the pepper.
    Heat to boiling; simmer 45 minutes, until tender.
    When done, remove meat.
    Add rice in juice.
