Mexican Casserole - cooking recipe

Ingredients
    1 lb. ground beef
    1 small chopped onion
    1 can diced tomatoes
    1 pkg. egg noodles
    1 can Ro-Tel tomatoes
    salt and pepper to taste
    1 bell pepper, chopped
    cheese (any kind; I use Cheddar)
Preparation
    In skillet, brown meat, onion and bell pepper.
    Drain.
    Add tomatoes and simmer.
    In large saucepan, boil water.
    Add noodles and salt; cook until tender.
    Drain.
    Add meat mixture to noodles. Pour into large baking dish.
    Spread cheese on top.
    Bake in oven until cheese melts.
    Yields 4 or 5 servings.
