Creole Porcupines - cooking recipe

Ingredients
    3 Tbsp. butter
    1 c. firmly packed brown sugar
    2 eggs, well beaten
    1 1/2 c. chopped pecans
    1 c. chopped dates
    3 c. shredded coconut
Preparation
    Melt butter and stir into sugar; beat in eggs.
    Add pecans, dates and 1 cup of the coconut.
    Form into small balls and roll in the remaining 2 cups of coconut.
    Place on greased baking sheet and bake at 300\u00b0 until cookies just begin to brown lightly, about 25 minutes.
    Makes about 4 dozen little cookies.
