Potato Pancakes(Preparation Time: 30 Minutes. Serves 6.) - cooking recipe

Ingredients
    3 large potatoes, peeled and diced
    2 Tbsp. cornstarch
    2 eggs
    4 egg whites
    1/4 c. heavy cream
    salt and pepper to taste
    1 Tbsp. lemon juice
    1/4 c. sour cream
    6 large slices smoked salmon
Preparation
    Cook potatoes in salted water.
    When cooked, pass potatoes through a food mill or sieve with fine holes.
    Place puree in electric mixer.
    Add cornstarch and mix.
    Slowly incorporate eggs and egg whites, then heavy cream.
    Season to taste.
