Curried Kidney Beans - cooking recipe

Ingredients
    1/4 lb. butter or margarine
    2 medium onions, chopped
    2 green peppers, chopped
    2 tart apples, chopped
    2 tsp. curry powder or to taste
    2 (28 oz.) cans tomatoes
    4 (15 oz.) cans kidney beans, drained
    2 c. brown sugar
    2 Tbsp. white vinegar
    salt and pepper to taste
    freshly grated Parmesan cheese
Preparation
    Preheat oven to 350\u00b0.
    Melt butter and saute onions, peppers, apples and curry powder until tender.
    Place tomatoes in a colander and squeeze until all liquid is removed (reserve liquid for other uses).
    Combine drained tomatoes with onion mixture, kidney beans, brown sugar, vinegar, salt and pepper in a casserole.
    Bake for 30 minutes.
    Sprinkle with Parmesan cheese before serving.
    Especially good with baked ham.
    Serves 12.
