Tapioca Pudding - cooking recipe

Ingredients
    2 c. skim milk
    2 Tbsp. quick cooking tapioca
    artificial sweetener to equal 5 Tbsp. sugar
    1/4 tsp. salt
    2 slightly beaten eggs
    1/2 tsp. vanilla
Preparation
    Combine milk, tapioca and sweetener and salt.
    Let stand 5 minutes.
    Add 2 slightly beaten egg yolks.
    Bring to a boil over medium heat, stirring constantly.
    Remove from heat (mixture will be thin).
    Add vanilla. Beat 2 egg whites to stiff peaks. Gradually fold in hot mixture. Chill.
    Serves 8.
