Carrot Cake - cooking recipe
Ingredients

4 eggs, slightly beaten
2 c. sugar
1 1/4 c. oil
2 c. plain flour
2 tsp. baking powder
2 tsp. soda
2 tsp. cinnamon
1 tsp. vanilla
3 1/4 c. grated carrots
1/2 c. pecans, chopped
1/8 tsp. salt
Preparation

Mix first three ingredients.
Add dry ingredients and mix well.
Add remaining ingredients, blending mixture.
Pour into two 8 x 4 x 3-inch loaf pans and bake at 325\u00b0 for 35 minutes or until done.
Cool and frost with cream cheese frosting.
