Ingredients

1 lemon
6 Tbsp. water
1/2 c. shortening
1 egg
1 pkg. (about 19 oz.) yellow cake mix
Preparation

Trim a thin slice from both ends of unpeeled lemon; cut in half lengthwise.
With a shallow V shaped cut, remove white center core. Cut halves in small chunks.
In electric blender, puree lemon chunks with water.
Add shortening and egg; blend until smooth.
In large bowl, combine cake mix and lemon mixture; mix well.
Drop batter from teaspoon on lightly greased cookie sheets.
Bake at 350\u00b0 for 13 to 15 minutes.
Makes about 5 dozen cookies.
