Eggplant Disguise - cooking recipe

Ingredients
    4 c. peeled, diced and steamed eggplant
    1 box Stove Top stuffing mix (both packs)
    1 can cream of mushroom soup
    1 egg
    1/2 c. chopped onions
    1/3 c. milk
    2 Tbsp. butter
Preparation
    Mix all together; put in baking pan.
    Top with Cheddar cheese. Bake for 20 to 30 minutes, until bubbly, at 350\u00b0.
    No one will ever know it's eggplant!
