Zucchini Parmesan - cooking recipe
Ingredients

2 Tbsp. olive oil
4 to 6 cubed zucchini
3/4 chopped onion
1 large garlic clove
1 tsp. salt
1 tsp. black pepper
3 to 4 large tomatoes, chopped
1/4 tsp. oregano
1/2 c. Parmesan
2 Tbsp. parsley
Preparation
-
Heat olive oil and saute the next 5 ingredients for about 20 minutes.
Add tomatoes and parsley and cook 5 to 10 minutes longer.
Sprinkle with Parmesan to serve.
