Morning Glory Muffins - cooking recipe

    2 c. flour
    1 3/4 c. sugar
    2 tsp. soda
    2 tsp. cinnamon
    1/2 tsp. salt
    2 c. shredded carrots
    1/2 c. raisins
    1/2 c. coconut
    1/2 c. drained crushed pineapple
    3 eggs
    1 c. oil *
    2 tsp. vanilla
    1/2 c. walnuts
Preparation
    *For the low-fat diet, substitute 1/2 cup water and 1/2 cup oil.
