Moroccan Chicken And Couscous Casserole - cooking recipe

Ingredients
    2 lb. cut-up frying chickens
    1 large sweet Spanish onion
    5 Tbsp. chopped dried mixed fruit or raisins
    1 c. couscous
    1/2 c. orange juice
    1/2 c. water or fat-skimmed chicken broth
    2 tsp. cumin seed or 1 tsp. ground cumin
    1/2 tsp. ground cinnamon or apple pie spice
    salt and pepper to taste
Preparation
    Broil chicken, skin side up, to brown the skin and melt the fat.
    Combine remaining ingredients in a casserole.
    Arrange chicken pieces, skin side up, on top.
    Cover casserole with lid or foil.
