Green Tomato Mincemeat - cooking recipe

Ingredients
    4 qt. finely chopped green tomatoes
    2 qt. pared and finely chopped tart apples
    1 lb. seedless raisins
    4 Tbsp. minced orange peel
    1 Tbsp. ground cinnamon
    2 tsp. allspice
    1/4 tsp. cloves
    2 c. firmly packed brown sugar
    3 c. white sugar
    3/4 c. vinegar
    1/4 to 1/2 c. lemon juice
    2 c. water
Preparation
    Combine all ingredients in a large kettle and cook slowly until tender and slightly thickened. Cover loosely and stir often to prevent sticking. Pour into hot sterile jars, filling 1-inch from lids. Store in cool dark place. Makes 4 quarts.
