Dad'S Armadillo Eggs - cooking recipe
Ingredients

3/4 c. any leftover cooked meat (chicken, sausage, beef, etc.)
1/4 c. any type cheese (Cheddar, Mozzarella or Monterey Jack)
1 clove garlic
2 Tbsp. onion
dried tomatoes (optional)
fresh jalapeno peppers
Preparation

Slit peppers lengthwise and remove seeds.
Leave stem on. Combine other ingredients in food processor and then stuff peppers with this mixture.
Bake at 375\u00b0 for 15 to 20 minutes or until peppers are tender.
Serve with Ranch dressing to dip in.
