Eggplant Patties - cooking recipe

Ingredients
    1 eggplant, diced
    1/2 tsp. parsley
    1 egg, beaten
    1/2 c. mushrooms, diced
    1/4 tsp. garlic powder
    1 Tbsp. Parmesan cheese
    salt and pepper to taste
    bread crumbs
    olive or vegetable oil
Preparation
    Steam eggplant in water 1/2 hour.
    Drain and mash.
    Add egg, mushrooms, cheese and seasoning.
    Add bread crumbs to make firm patties.
    Fry in hot oil until brown on both sides.
