1 pkg. or 1 Tbsp. unflavored gelatin
2 c. low-fat cottage cheese
2 c. strawberries
1/2 c. pineapple juice
salad greens or berries
Preparation

In small saucepan, sprinkle gelatin over pineapple juice.
Let stand 2 minutes.
Cook juice over low heat until gelatin is completely dissolved.
Combine juice, cottage cheese and strawberries in blender or food processor until smooth.
Turn into a 1-quart mold.
Chill until firm; unmold onto salad greens.
May garnish with a few fresh strawberries and mint leaves.
To serve, cut 2-inch slices and place on a bed of salad greens.
