Ingredients

2 egg whites
2 egg yolks
2/3 c. milk
1 c. sifted flour
1 tsp. salt
1 Tbsp. melted butter
2 Tbsp. lemon juice
Preparation

Put egg whites into small bowl.
Beat until stiff but not dry. Mix egg yolks and milk in large bowl.
Sift together flour and salt.
Add to milk mixture.
Beat on medium speed until blended, scraping bowl while beating.
Beat in butter and lemon juice.
Add beaten egg whites and gently fold in, only until blended.
Batter can be used for onion, green tomatoes or artichoke hearts.
