Strawberry-Amaretto Trifle - cooking recipe

Ingredients
    1/3 c. sugar
    3 Tbsp. Minute tapioca
    1 egg, slightly beaten
    2 1/2 c. skim milk
    1/4 c. Amaretto (may use almond extract)
Preparation
    A day ahead, make tapioca pudding as follows:
    Combine all pudding ingredients in saucepan.
    Let stand 5 minutes.
    Cook and stir over medium heat until mixture comes to a full boil (pudding thickens as it cools).
    Remove from heat.
    Put in refrigerator bowl and lay a piece of Saran Wrap on the pudding.
    Refrigerate overnight!
