Torta Rustica - cooking recipe

Ingredients
    1 lb. Sweet Italian Sausage
    2 (4 oz.) Jars Pimentos (Drained, Sliced)
    1 Egg
    8 oz. Ricotta Cheese
    2 Ready made 9-inch Pie Crusts
    8 oz. Mozzarella Cheese (Shredded)
    1 tsp. Basil or Oregano
Preparation
    1. Remove casing fron sausage and brown (crumble), and drain on paper towel. 2. Separate egg, mix yoke with ricotta cheese and basil or oregano.
    Roll first pie crust to fit 9-inch pie plate. 3. Sprinkle 1/2 mozzarella, 1/2 sausage, all pimentos, all ricotta cheese mixture, then 1/2 sausage, 1/2 the mozzarella. 4. Roll second pie crust to fit top.
    Use pastry brush to brush top of pie crust with egg whites.
    Bake at 375\u00b0 for 25 minutes.
    Cover with foil after 15 minutes if crust is getting too brown.
