Pineapple Refrigerator Relish - cooking recipe

Ingredients
    2 c. finely chopped fresh pineapple
    3 Tbsp. chopped fresh cilantro
    3 Tbsp. minced sweet red pepper
    2 Tbsp. finely chopped purple onion
    2 Tbsp. sugar
    2 Tbsp. vinegar
    1/2 tsp. grated lime rind
    1/8 tsp. salt
Preparation
    Combine
    pineapple,
    cilantro,\tred
    pepper
    and purple onion in a glass bowl, tossing well.
    Combine sugar, vinegar, lime
    rind and salt; stir well.
    Pour over pineapple mixture. Cover and chill
    2
    hours.
    Serve relish with grilled pork or chicken, using a slotted spoon.
    Store relish in refrigerator. Yield:
    2 1/2 cups.
