Lemon Pie - cooking recipe
Ingredients

3 c. pineapple juice
5 Tbsp. cornstarch or arrowroot
1/2 c. shredded coconut
1/3 tsp. salt
2 tsp. lemon juice
1 tsp. lemon extract
1/3 c. honey
chopped pecans
Preparation

Combine all ingredients except lemon juice and extract in blender and whiz until liquid has a smooth consistency with most of coconut well blended.
Pour into saucepan and heat until thickened.
Cool slightly, then add lemon juice and extract and mix well.
Pour into baked pie shell of your choice or you may pour into custard cups.
Chill and serve.
