Baked Rice Custard - cooking recipe

Ingredients
    2 cups milk
    3 eggs
    3/4 cup sugar
    1/2 tsp. salt
    1 cup cooked rice
    1/4 cup raisins
    1 tsp vanilla
    1/4 tsp ground nutmeg
Preparation
    Scald milk in the top of a double boiler.
    Slightly beat eggs and combine with sugar and salt in a 1 1/2 quart casserole. Gradually stir in scalded milk, add cooked rice, raisins and vanilla. Sprinkle with nutmeg and place in oven.
    Bake at 325 until set, about 50-60 minutes.
    Makes 6-1/2 cup servings.
