Ritz Cracker Pie - cooking recipe

Ingredients
    16 Ritz crackers, crumbled
    1 c. chopped pecans
    3 egg whites
    1 c. sugar
    1/2 tsp. baking powder
    1 tsp. vanilla
    1 tub Cool Whip
Preparation
    Combine chopped nuts and cracker crumbs. Beat egg whites (as if you were making meringue), add sugar and baking powder. Fold into nut mixture and add vanilla. Pour into a 9 inch pie pan and bake in a slow oven 250 - 300 degrees for about 45 minutes or until knife inserted in center comes out clean. Cool and top with Cool Whip. This pie may be made a day ahead of time. It's also great with ice cream on top instead of Cool Whip.
