Chicken Soup - cooking recipe

Ingredients
    4 lb. chicken, quartered
    2 stalks celery with tops
    1 onion
    3 to 4 carrots, sliced
    salt to taste
    2 to 3 qt. boiling water
Preparation
    Cream chicken and place in soup pot.
    Add water and allow to boil a few minutes.
    Skim soup carefully.
    Add vegetables and seasonings.
    Lower heat and cook slowly, 1 1/2 to 2 hours.
    Remove onion and serve with matzo balls.
