Rich And Zesty Mushroom Soup - cooking recipe

12 oz. fresh mushrooms, sliced
2 c. chopped onions
4 Tbsp. butter
3 Tbsp. flour
1 c. milk
2 tsp. dill weed
1 Tbsp. paprika
1 Tbsp. soy sauce
2 c. beef or chicken stock
1/2 c. sour cream or plain yogurt
2 tsp. lemon juice
pepper to taste
Preparation

Saute onions in 2 tablespoons butter for a few minutes.
Add mushrooms, dill, soy sauce and paprika.
Continue to saute until vegetables are barely tender, then add 1/2 cup of stock and reduce heat to simmer.
Melt remaining butter in saucepan.
Whisk in flour and cook 2 minutes or so.
Gradually add milk and cook over low heat until thick, stirring often.
Stir thickened mixture into mushroom mixture and add remaining stock.
Cover and simmer 15 minutes.
Add lemon pepper and cream or yogurt just before serving.
