Chicken Soup - cooking recipe
Ingredients

2 Tbsp. butter
1 stalk celery, finely chopped
1 carrot, finely chopped
1/2 c. finely chopped onion
1 large chicken breast, skinned
1 qt. chicken broth
4 oz. noodles (wide or Dutch)
1 c. corn (frozen or canned)
1/4 tsp. black pepper
Preparation

Melt butter in a large saucepan.
Stir in celery, carrot and onion; coat with butter.
Add chicken.
Cook over low heat, covered, for 10 to 15 minutes.
Remove chicken, cut into small cubes and return to pan.
Add broth.
Bring to a boil and add noodles and corn.
Simmer for 15 minutes or until noodles are done.
Season with pepper and salt, if needed.
Makes about 4 servings.
