Brown Rice With Black Beans - cooking recipe

Ingredients
    1 c. brown rice
    2 c. water
    1 Tbsp. olive oil
    1/2 c. finely chopped onion
    1 c. finely chopped sweet red pepper
    2 jalapeno peppers, seeded and finely chopped
    2 ears corn, kernels removed or 1 c. frozen corn
    1 large tomato, peeled and finely chopped
    1 (15 oz.) can black beans
    1 Tbsp. chili powder
    1 tsp. balsamic vinegar
Preparation
    Cook brown rice in water as directed on package.
    Meanwhile, saute onion, sweet red pepper and jalapeno peppers in olive oil until softened but not browned, about 2 to 3 minutes.
    Add corn, chopped tomato and black beans with liquid from can.
    Sprinkle with chili powder and balsamic vinegar and stir well.
    Simmer, covered, 15 minutes.
    Keep warm until rice is ready.
