Zucchini Bread - cooking recipe
Ingredients

1 Cup margarine (not spread)
2 Cup sugar
3 eggs
3 tsp. vanilla
2 Cup zucchini, unpeeled, grated
3 cup flour
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
1/2 cup chopped nuts (optional)
Preparation

Cream margarine and sugar together, add eggs and mix well. Add zucchini and vanilla and mix thoroughly.
Blend in dry ingredients gradually to creamed mixture.
Stir in nuts.
Grease loaf pan well (13 X 5 X 3).
Bake at 350 for 1 hour.
Cool on wire rack at least 10-15 minutes.
