Arroz Con Pollo - cooking recipe

Ingredients
    1/2 c. olive oil
    1 chicken (cut in pieces)
    1 small onion (chopped)
    1 clove garlic
    1/4 c. tomato sauce
    1/8 tsp. saffron
    2 1/2 c. chicken broth
    1 c. rice
Preparation
    Heat
    oil, brown chicken, add onion and garlic, fry for a few minutes, then add tomato sauce and the saffron which has been dissolved
    in the chicken broth.
    Salt and pepper, cover and
    cook for 20 minutes, add rice and stir well.
    Cover again and
    simmer for
    30
    minutes or until all liquid has been absorbed and chicken is tender.\tServes 4 to 6.
