South Texas Beans And Rice - cooking recipe

Ingredients
    1 1/2 c. dry pinto beans
    7 c. water
    1 small ham hock
    1 medium onion, chopped
    2 cloves garlic, chopped
    1 1/2 tsp. salt
    1 lb. smoked beef or pork sausage, sliced
    1 (10 oz.) can Ro-Tel tomatoes
    1/2 c. uncooked rice
Preparation
    Sort and wash beans.
    Combine beans, water, ham hock, onion, garlic and salt in a large pot.
    Cover and simmer 45 minutes.
    Add remaining ingredients.
    Cover and simmer 1 hour.
    Remove ham hock and shred ham from bone; return to bean mixture.
    Simmer until done.
