Divinity - cooking recipe
Ingredients

2 c. granulated sugar
1/2 c. light corn syrup
1/4 tsp. salt
1/2 c. water
2 egg whites
1 tsp. vanilla extract (almond or lemon extract may be used)
3/4 c. candied cherries or 1 c. chopped nuts
Preparation

Dissolve sugar, syrup and salt over low heat, stirring.
Cook, without stirring, to 248\u00b0 or to firm ball stage (or light crack stage, 265\u00b0).
Wash down with a damp cloth any crystals that may form on the sides of the pan during cooking.
Remove from heat and pour gradually over the stiffly beaten egg whites.
Add extract and continue beating until mixture will hold its shape when dropped by spoonfuls on wax paper.
