Parmesan Chicken - cooking recipe
Ingredients

4 boned chicken breasts, halved
1/2 c. butter or margarine
1/2 c. Dijon mustard
1/4 tsp. tarragon, crushed
1 c. fresh bread crumbs
1/4 c. grated Parmesan cheese
3 Tbsp. fresh parsley, chopped
1/16 tsp. cayenne pepper
Preparation

Melt and mix together the butter, mustard and tarragon.
Dip chicken in mixture, turning to coat all sides.
Mix crumbs, Parmesan cheese, parsley and cayenne.
Dredge chicken, one piece at a time, in crumb mixture, patting with hands to coat.
Arrange chicken in single layer in baking dish.
Bake at 350\u00b0 for 45 minutes.
Serves 8.
