Tortellini Minestrone(8 To 10 Cups) - cooking recipe

Ingredients
    1 1/2 lb. Italian sausage
    6 c. beef broth
    1 c. chopped onion
    1 c. dry red wine
    1 lb. can undrained tomatoes
    1 c. thin sliced celery
    1 tsp. Italian seasonings
    2 cloves minced garlic
    2 c. sliced zucchini
    1/2 lb. cheese tortellini
    1 medium green pepper, diced
    1/4 c. chopped parsley
    grated Parmesan
Preparation
    In 5-quart Dutch oven, brown sausage.
    Add next 7 ingredients. Bring to a boil; simmer, uncovered, for 30 minutes.
    Skim any fat from soup.
    Stir in zucchini, tortellini, green pepper and parsley. Simmer, covered, until pasta is tender, about 30 to 40 minutes. Sprinkle with Parmesan cheese.
