Squash Sonata - cooking recipe

Ingredients
    3 lb. yellow squash, sliced
    2 onions, chopped
    2 carrots, sliced
    2 cans cream of chicken soup
    1 carton sour cream
    1 small jar pimentos
    1/2 c. melted butter
    1 pkg. Pepperidge Farm stuffing mix
Preparation
    Cook squash, onions and carrots in boiling salted water until tender; drain well.
    Add soup and sour cream.
    Drain pimentos; chop.
    Add to squash mixture; stir well.
    Mix butter and stuffing in greased casserole.
    Add squash mixture.
    Cover with remaining stuffing mix.
    Bake in preheated 375\u00b0 oven for 45 minutes.
