Mincemeat Holiday Cake - cooking recipe

1 c. ready-to-use mincemeat
1 c. chopped walnuts
1 Tbsp. rum flavoring
1 tsp. vanilla extract
1 c. mayonnaise
1 1/2 c. buttermilk
3 1/4 c. sifted all-purpose flour
1 1/2 c. sugar
1 tsp. salt
3/4 tsp. baking soda
grated rind of 1 medium orange
1 c. candied fruit
6 oz. jar maraschino cherries, drained
candied cherries
Preparation

Combine mincemeat, nuts, rum flavoring and vanilla extract. Line bottom of 9-inch tube cake pan with heavy brown paper.
Blend mayonnaise and buttermilk in mixing bowl.
Stir flour, sugar, salt and soda over mayonnaise mixture.
Add orange rind, candied fruit and maraschino cherries and mix well.
Then stir in mincemeat mixture.
