Fat-Free Banana Cake - cooking recipe
Ingredients

2 1/4 c. whole wheat pastry flour
2 1/2 tsp. baking powder
1 1/2 tsp. baking soda
2 1/4 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. ground cloves
1/2 tsp. ground allspice
3/4 c. honey
3/4 c. unsweetened applesauce
4 tsp. Ener-G Egg Replacer, mixed with 8 Tbsp. water and beaten until frothy
3 c. mashed banana
3/4 c. raisins
3/4 c. chopped walnuts (optional; high fat)
Preparation

Preheat oven to 350\u00b0.
Mix the dry ingredients together; set aside.
Mix the honey and applesauce together.
Add the egg replacer mixture, banana, raisins and walnuts.
Add the wet mixture to the dry and mix well.
Turn into a nonstick 13 x 9-inch pan and flatten slightly with a spatula.
Bake for 1 hour, or until a toothpick inserted in the center comes out clean.
